C'Est What?
Our wines are produced annually from quality grapes that I source from various growers in Niagara. Stainless steel tanks are used for fermentation and storage, and the tanks are kept in a temperature-controlled working cellar. I also employ barrel fermentation, barrel ageing, maloactic fermentation and ageing "sur lie", depending on the style and type of wine. Four or five wines are produced each year.

Chesslawn Vineyards and Winery
Our Vineyard is based in glacial deposit soil mainly profiled as medium sand/silt. Our soil pH averages 7.1, serving as an excellent source of vital nutrients for vigorous vine growth. This place specializes in 3 different styles of Honey wine or Mead. They sell Mead, Kosher wines and melomels, a fruit and honey blend. The term honeymoon was derived from this honey wine, which was drunk for 30 days after the wedding, to ensure fertility. Coffin Ridge Vineyard and Winery started as many things do...with a dream. For Neil Lamont, owner of Coffin Ridge, it was the challenge of growing grapes in the terroir of Grey County that first intrigued him and then became his dream for the future. His science background prepared him for the research necessary to sort out which grape varieties would go best with the soil and climate of Grey County. 4. Niagara Peninsula Wine Region:
In 2004, in a little shop in Ontario’s Niagara Peninsula, a group of the region’s finest grape growers gathered to make plans for their own winery. Their goal was simple. The finest wines can only be produced from the best quality grapes. Cave Spring wines are made from vitis vinifera, the classic grape varieties of Europe. We concentrate on varieties native to regions with growing conditions similar to our own. Chardonnay, for example, is the great white grape of Chablis and Burgundy in Northern France, while Riesling is the source of Germany's most famous wines. By working with classic varieties which are well suited to Niagara's cool climate, our winemakers are able to capture the goût de terroir which makes the Beamsville Bench unique. HEW is located on one of the most unique properties in the Niagara Peninsula. Having 1800 feet of frontage on Jordan Harbour, HEW is the most prominent point in Jordan Harbour as seen from the Queen Elizabeth Highway. Harvest Estate Wines
A highlight of any foray into the region should include a stop at Harvest Estate Wines. There are superb wines for you to enjoy, unique specialty (souvenir) wines, a viewing of some fine giftware, and of course, as well, you will find many edible treats next door at the Harvest Barn. This small vineyard is located on the Niagara Bench. Henry of Pelham Family Estate produces wine built on the philosophy that low yeilds and small volumes of handmade wines ensure each is made with high standards and is the best quality possible. Founded in 2003 by Harald Thiel and family, Hidden Bench is a quality driven, terroir based winery whose varital focus is Pinot Noir, Chardonnay and Riesling. In addition we also produce limited quantities of a white meritage, Nuit Blanche, and two distinct red blends, Terror Cache, and the super premium La Brunante. Our 2005 production was approximately 3,000 cases and we anticipate that total production will eventually reach a maximum of about 8,000 cases in 2010. Due to strong demand and a small supply most wines are already on limited allocations.

Under Dan’s direction, his wines will be produced by Diamond Estates Wines & Spirits Ltd., a top independent Toronto-based wines and spirits agency which owns several Canadian award-winning wineries.
Italy introduced us to a whole new world of fine food, wine, and the simple joys of everyday life. We discovered the wonders of Amarone styled wines in the northern part of the country. The more we learned about them, the more excited we became at the prospect of bringing this incredible craftsmanship back with us to Ontario.
And so we did. In 2000, with the kind encouragement of a dear friend, John Howard, we acquired some prime farmland in the Vineland area of the Niagara Peninsula. We then sourced and planted 40 acres of Amarone-inspired vines. After three years of carefully nurturing the vines, our first crop was harvested in 2004. In the time-held tradition of Amarone, we then proceeded to delicately dry our grape stock in a barn until each of the varietals were perfect for winemaking.

William Lailey was a pioneer of Canadian viticulture. In the early 1950's he planted and propagated some of Niagara's first French hybrid varieties. In 1970, Donna and David Lailey purchased the land from William and Nora Lailey, David's parents. In addition to French hybrid grapes, the land was cultivated in pears, sweet cherries and peaches. Donna and David began a transformation of the 20 acre farm into a vineyard. In consultation with industry leaders, they planted vitis vinifera and French hybrids for the production of quality wine at local wineries.

6. Prince Edward County Wine Region:
In 2002, we began planting 10 acres of grapevines on a fertile, sandy loam ridge in Picton, Ontario. The Black Prince vineyard includes plantings of Chardonnay, Cabernet Franc, Chambourcin, Baco Noir, Regent, Marechal Foch and Vidal.
As well as growing our own grapes, we also facilitate grape growers in Prince Edward County who have not yet established a winery. This co-operative effort allows smaller growers to make wine to their specifications and market this wine in our facility.

The newest winery to open in Prince Edward County, touring the grounds is a fascinating glimpse of pioneer life. The winery is a barn complex about 100 years old, and the barns were made from much older beams. The tasting room is a brick building circa 1800's that was perhaps an old school. One of the oldest sheep barns in Ontario is on the property, and the owners still raise sheep. On the grounds, there is an old cemetery, with the oldest grave from about 1802.

Dry, sparkling cider with 6.5% alcohol, available at many Ontario LCBO liquor outlets. Vineyards have been planted with 3 grape varities: Riesling, Zweigelt and Gamay. The County Cider produced their first major grape harvest in 2002.

33 Vines is a boutique winery that will produce premium red and white wines from vinefera grape vines on our seven acre parcel of land overlooking the Adolphus Reach inlet on Lake Ontario.

This is the second winery in the new Prince Edward County wine region. The skylit pavillion was made from natural limestone. Doors open from the winestore to the back balcony and a wonderful view of gardens, vineyards and Lake Ontario. The name Waupoos comes from the Indian word for rabbit. Tastings are $2.00 for up to four samples. Offerings include Chardonnay, Vidal, Geisenheim (riesling style) Rose, Cabernet Gamay and Baco Noir.
