C'Est What?
Our wines are produced annually from quality grapes that I source from various growers in Niagara. Stainless steel tanks are used for fermentation and storage, and the tanks are kept in a temperature-controlled working cellar. I also employ barrel fermentation, barrel ageing, maloactic fermentation and ageing "sur lie", depending on the style and type of wine. Four or five wines are produced each year.

Chesslawn Vineyards and Winery
Our Vineyard is based in glacial deposit soil mainly profiled as medium sand/silt. Our soil pH averages 7.1, serving as an excellent source of vital nutrients for vigorous vine growth. The vineyard area was previously tile drained for excellent drainage properties. With gently rolling hills, the vineyard is a beautiful location for growing the best possible grape vines in the area.

This place specializes in 3 different styles of Honey wine or Mead. They sell Mead, Kosher wines and melomels, a fruit and honey blend. The term honeymoon was derived from this honey wine, which was drunk for 30 days after the wedding, to ensure fertility. 4. Niagara Peninsula Wine Region:
In 2004, in a little shop in Ontario’s Niagara Peninsula, a group of the region’s finest grape growers gathered to make plans for their own winery. Their goal was simple. The finest wines can only be produced from the best quality grapes. Cave Spring wines are made from vitis vinifera, the classic grape varieties of Europe. We concentrate on varieties native to regions with growing conditions similar to our own. Chardonnay, for example, is the great white grape of Chablis and Burgundy in Northern France, while Riesling is the source of Germany's most famous wines. By working with classic varieties which are well suited to Niagara's cool climate, our winemakers are able to capture the goût de terroir which makes the Beamsville Bench unique. HEW is located on one of the most unique properties in the Niagara Peninsula. Having 1800 feet of frontage on Jordan Harbour, HEW is the most prominent point in Jordan Harbour as seen from the Queen Elizabeth Highway. Our 2005 production was approximately 3,000 cases and we anticipate that total production will eventually reach a maximum of about 8,000 cases in 2010. Due to strong demand and a small supply most wines are already on limited allocations.

Kacaba Vineyards philosophy is dependent upon small quantities. Our production is limited by our ability to handle and manage quantities that can be produced mainly by hand. Pumping is kept to a minimum and gravity is used for bottling and racking. This methodology is quite simple really - we lift our tanks and barrels with a forklift.
